MY FALL CANNING



Autumn seems to hit me right in the gut when I am least expecting it.  Summer is a blur and my canning peaches & pears are a stinging reminder that the overcast weather is on it's way :(  

Every year it seems that if I miss out on canning it makes me feel a bit anxious and empty like I have missed an important meeting or something like that.  I get really worried around the end of July- feeling that I have already missed out on the Elberta's & bartlett's, when I clearly know that it isn't until the end of August-beginning of September when they are ready.  So when I find out that I have enough time to can, I do.   I tend to go overboard when purchasing them & later regretting the work that lies ahead.

One thing I do like is that these go straight into our food storage and throughout the remainder of the year we eat them and enjoy them even in the dead of winter.

If you aren't into canning.....I suggest you should be.  It is fun, it gives me a sense of satisfaction and most of all the great taste of the fruit!
